ANALYSIS OF FLAVONOIDSAND ALCOHOL CONTENT IN PLANTAIN WINE (Musa paradisiaca)

The plantain (Musa paradisiaca) is one of the most important horticultural plants in the world because of its considerable production potential. Plantains contain high enough sugar levels that they can be used as a fermented base for alcoholic beverages such aswine. The purpose of this study was to find out the presence of flavonoid content and alcohol content contained in fermented king banana wine. The method used in this study is an experimental method with 1 treatment and 3 repeats. Samplesof the banana king fruit (Musa paradisiaca) wereobtained from thetraditional market of the president. Bananas are washed, cut into pieces and weighed, blended, boiled, refrigerated, filtered, then add 300g sugar and 11g yeast, bottled and fermented for 21 days. Data obtained in this study is the flavonoids and alcohol content in the wine of plantains. The data obtained is analyzed in quantitative and qualitative descriptions presented in the form of graphs, tables and figures. Based on the data from the study, it was found that the alcohol content found in banana wine is 5%. King banana wine has quality color, aroma, and flavor. While hasil test flavonoid content in banana wine extract added ethanol and HCL color becomes red sehingga shows the presence of flavonoid content.
